What is demineralized whey powder?

Demineralized whey powder (DemWhey) is produced from sweet whey by removing mineral salts through electrodialysis or ion exchange, followed by concentration and spray drying. The demineralisation percentage refers to the proportion of minerals removed — predominantly potassium, sodium, calcium and phosphorus — relative to the mineral content of the original sweet whey.

DemWhey 90% has 90% of minerals removed. This brings the K/Na ratio and total mineral load close to the profile of human breast milk, making it the standard whey base for type 1 infant formula (first-age/starter formula). It is used as the primary carbohydrate and protein source in the whey-dominant protein fraction of infant formula under EU Regulation 2016/127 on infant formula composition.

DemWhey 40% has 40% of minerals removed. The mineral load is higher than the 90% grade but lower than sweet whey powder. It is used in follow-on formula (stage 2+), growing-up milks and other dairy formulations where partial demineralisation is sufficient. It is also used in some confectionery and dairy applications where a lower-mineral whey base is required without the cost of 90% demineralisation.

Both grades are produced from fresh EU sweet whey, full lot traceability from origin. FSSC 22000 and BRC-certified supply chains. Salmonella absent per 25g, Listeria absent per 25g as standard micro specification.

Where DemWhey is used

Demineralized whey powder is a regulated dairy ingredient with specific grade requirements per application. Using the wrong demineralisation level is a formulation error.

Infant Formula (Type 1 / Starter)

DemWhey 90% is the correct grade for starter infant formula (age 0–6 months) under EU Reg. 2016/127. The high demineralisation ensures the K/Na/mineral profile is compatible with the composition requirements for infant formula. DemWhey 40% does not meet the mineral reduction requirements for type 1 formula.

DemWhey 40% is used in follow-on formula (6–12 months) and growing-up milks (1–3 years) where the strict mineral limits of type 1 formula do not apply. The lower cost per kg vs DemWhey 90% is a relevant procurement factor at scale.

Infant formula composition in the EU is governed by Commission Delegated Regulation (EU) 2016/127. This regulation specifies the composition requirements for infant formula (0–6 months) and follow-on formula (6–12 months). Demineralized whey powder used in infant formula must meet the protein and mineral specifications required by this regulation, confirmed per batch. Standard microbiological specification for both grades: TPC ≤10,000 cfu/g, coliforms ≤10 cfu/g, Salmonella absent per 25g, Listeria monocytogenes absent per 25g, Staphylococcus aureus ≤100 cfu/g. For infant formula use, the Salmonella and Listeria specifications are critical — confirmed on the CoA per batch. Additional testing (Cronobacter/Enterobacteriaceae) available on request.
